It really sort of depends on what she/you like doing.
There are a number of wee museums about, there is the Pavillion and various other bits and pieces, but that wouldn't suit if she hates that kind of thing.
There is always wandering through the lanes (both of them) if she has never been here before and the Pier too. Why don't you ask her if there is anything in particular she would like to see, or something that she definitely would not like to see (always good to hedge your bets this way).
Really I'm just seeing if anyone has any particularly cool ideas.

I second pootering around the lanes, and there's some interesting little galleries down in the vaults by the beach. Don't go to the city museum, it's a bit boring. Hey, as it's up near you, inflict the Booth Museum on her. If she's squicked then she's not The One ;)
The ShakeAway milkshake place is fun for a sit-down, drink and chat (elevensies?).
If she likes geeky things and/or shopping, I seem to recall there's a cool sword shop and various other interesting independent little shops in the Lanes. Gives plenty to talk about while walking around.
If it's wet outside, maybe the sealife centre would be fun!
Lunch at the Lord Nelson, then a potter through the North Laines, then down to the Pavilion, then back to the Mock Turtle for tea, then a walk along the Pier and the tat as the sun sets.
